This has happened a few times to me after an app crashes. Just press the Lock and Home button together and keep them pressed. If it doesn't work on the first try, try a couple times it can be stubborn. Might be a hokus pokus way to do it, but it has un-frozen my iPod Touch.

i have done that and turn off, then i turn it on again and the apple logo keeps staying there.... :apple: never looked so bad🙁
 
Try restoring the iPod. Turn off the iPod, then while holding down the home button, plug it into the USB port on the computer and continue to hold until it says "Recovery Mode" or something like that. iTunes should then prompt you to restore the iPod.
