I've imported a few records to my computer, each disc is a single AIFF audio file right now. What I'm wondering.... is there a piece of software that will take my one big file and figure out where the track breaks are and save individual songs or am I going to have to do that by hand?

Protools has a "remove silence" function that splits recordings with gaps into separate files that can then be bounced out to individual files, but it's hardly less labour intensive than doing it by hand.
The actual editing isn't the time consuming part, and you can do it in GarageBand, bouncing the track to .aiff files will take the length of each of the files, unless you do an off-line bounce (which I wouldn't recommend).
I haven't seen an automated system, but there might be one out there, have you looked in Versiontracker.com?
