To preface, I am a new iPhone owner.

I recently purchased an unlocked & Jailbroken iPhone 2G and it has 2.0.1 firmware. There's no sim currently installed, and I have not used GSM before. And just playing around with the iPhone, I tried to open iTunes, and it requires that I enter the password for the previous owner's iTunes email address.

Does this mean I have to reset my iPhone, so that it can recognize my own iTunes account?

uhhh you should get your money back... is there even a way to unlock v2.0? and you're going to need a SIM card before you can do anything.

Yes 2.0 is unlockable.. so is 2.0.1 and 2.0.2. You dont need a sim card for the unlocking process..but you do need it to check whether it is unlocked or not.

just set up your own account on itune..plug your iphone in and it should transfer your account over. If that doesnt work, all you gotta do is restore it. Not that hard..no need to get your money back.
