Well I ran PwnageTool on my Hackintosh which was still running 7.7, was able to make the ipsw just fine. Did the actual upgrade back in Vista, though. I don't think the order matters, but you'll need 8 for the actual flash process.

So i can go ahead and do the down load of 8.0 and then the Pwnage tool and should be okay?

I upgraded to iTunes before, and everything worked fine for me.

I jailbroke my iphone 3g with 2.1 firmware. The phone works fine. HOWEVER
itunes 8 wont let me back up my phone. When it goes to back up I get the following error message:
iTunes could not back up iphone "iphone" because the iPhone has been disconnected.
Mean time the phone is connected via USB on my mac.
Any help would be appreciated.

I thought iTunes 08 doesn't allow you to restore with custom firmware?

It does, but to load custom firmware, the phone has to have jailbroken firmware already on it. Otherwise, you get Error 6 in iTunes 8 (and phone must be Restored).

Thats not quite right.
iTunes 8 won't let you restore using a custom firmware unless it was made using pwnage 2.1.
The devteam did something to the custom firmware to get itunes to accept it but older firmware doesn't work any longer on iTunes 8.

Well, the question was about "custom firmware", not "older firmware". I think all the current custom firmware ipsw's floating about have been made with the pwnage 2.1 software (on a mac), so us Windows users can jailbreak.

I meant older "custom" firmware.
It makes no sense to say it won't work with older normal firmware when of course it will.
Using an already made pwnage 2.1 firmware would work on itunes 8 as you already said.

Not sure if it will help with your problem, but worth a shot IMO:
Try find your backup folder in ~/Library/Application Support/MobileSync/Backup
Inside that will be a folder (possibly multiple) with your udid (unique device ID) and maybe a timestamp. Trash (or better yet, move somewhere else) these folders (or the entire parent folder may be easier). Then reconnect your iPhone. This should hopefully force a complete backup, rather than a partial one, to occur (maybe takes longer?).
