Please suggest a Best book for developing a GUI based Java Application using Xcode3?

You don't want to develop Java apps in Xcode. Use Netbeans 6.1 or 6.5 and Matisse the GUI Builder.

The Java - Cocoa bridge is dead, and has been for years.

As for a book using Swing and Matisse, there aren't any. If you look on the Netbeans site, they have a plethora of tutorials using the Matisse framework. Just be prepared to step back 15 years as if NextSTEP and Mac OS X never existed. Matisse does not use the MVC design pattern, it uses the Windows model for associating data with a view.
