....but itunes keeps moving them to it's own folder, how can I keep them on the external drive, but still have them in iTunes? 😕

In your iTunes preferences, if you go to the advanced tab you can select whether iTunes copies files to the iTunes Music folder when adding to the library or not by de-selecting the checkbox.
