Would it be possible for someone to create a notepad app that has a icon that is invisible? i.e. it looks just like the black part of the screen....only you would really know its there...Just curious, as it would be a good spot to store some semi private data without having to enter passcodes and such.

Because security through obfuscation is such a good idea...

I very much doubt it would be possible for an official app as the app name would have to be blank along with an all black icon, the latter may be possible but getting the right shade could be hard especially with the rounded corners added by the iPhone OS.

Your best bet would be something for jailbroken phones.
