What to update to?

Ok, I did the jailbreak to my touch back when this all first came out and have been completely happy with it but now I feel that I should do an update. I am still running 1.1.1, so what version should I update to? I still want to be able to jailbreak it.

2.1, its MUCH MUCH MUCH more stable than 1.1.1, has more apps, the app store, and you can still jailbreak it.

Agreed.
You'll see a HUGE difference between the Firmwares.
