I was wondering how to capture something like cloud movement over a long period of time in the day. If I set my camera to f36 and leave the shutter open for even a minute the shot is way overexposed. What is the proper method to achieve this kind of a shot?

Check out neutral density (ND) filters...

They cut down the amount of light entering the lens, without altering the colour values... so you can do 'long exposures' in daylight...
