I was out with the boy scouts all weekend. We had a cooking themed camporee. One of the demos was utensiless cooking. They did bacon in a paper bag. You put bacon and eggs in a paper bag and put it on a rack above the coals.

Yummy.

We were at an upscale restaurant yesterday (a step up from our usual fare) so I tried something that sounded interesting: a salmon pastrami sandwich. It also had avocado, tomatoes, not sure what else in there, but not bacon. However, I was surprised to find it had a bit of a bacon taste. Why would this be?

I was a little surprised, because I didn't know that you could apply the pastrami process to salmon, so I was just taking a chance for the sake of trying something new. I guess the pepper or other spices gave it the bacon flavor. I'm sorry I didn't save you some, emw.

Sad news.

My wife bought a 10# display pack of bacon at Sams. We were out of town for thanksgiving and about 1/3 of it went moldy in the fridge.

We were devastated. We couldn't even bear to have a proper send off.

mmmmm Bacon

Vincent: Want some bacon?
Jules: No man, I don't eat pork.
Vincent: Are you Jewish?
Jules: Nah, I ain't Jewish, I just don't dig on swine, that's all.
Vincent: Why not?
Jules: Pigs are filthy animals. I don't eat filthy animals.
Vincent: Bacon tastes gooood. Pork chops taste gooood.
Jules: Hey, sewer rat may taste like pumpkin pie, but I'd never know 'cause I wouldn't eat the filthy motherf******. Pigs sleep and root in sh*t. That's a filthy animal. I ain't eat nothin' that ain't got enough sense enough to disregard its own faeces.
Vincent: How about a dog? Dogs eats its own feces.
Jules: I don't eat dog either.
Vincent: Yeah, but do you consider a dog to be a filthy animal?
Jules: I wouldn't go so far as to call a dog filthy but they're definitely dirty. But, a dog's got personality. Personality goes a long way.
Vincent: Ah, so by that rationale, if a pig had a better personality, he would cease to be a filthy animal. Is that true?
Jules: Well we'd have to be talkin' about one charmin' motherf******' pig. I mean he'd have to be ten times more charmin' than that Arnold on Green Acres, you know what I'm sayin'?

thin lean British bacon, english muffin (they have another name, but thats what Sainsbury's call em!), real butter - lots of it, HP or BBQ sauce. Bacon under the grill until the tips are just getting a tiny bit black, switch the oven off, stick the muffins in a toaster for 2 minutes (so they're just crunchy) whilst the bacon dries up. and eat.

For the daring among try small sausages sliced in half, or scrambled egg. OR try both
A slice of heaven. of course you need an orange and mango smoothie to balance the good and bad.

thats my brekfast/dinner usually. or Marks & Spencers Triple Chocolate Crunch cereal... when they say "It's not just food, is M&S food" they are so bloody right.

Bacon doesn't cause cancer. The stuff that preserves it (http://lpi.oregonstate.edu/f-w00/nitrosamine.html) might if taken in excess.

That's why I buy natural, dry-rubbed, uncured bacon. Now I hope I don't have an increased risk for botulism... (the reason the preserves are in the bacon, according to the article in your link)

I did a search and was too lazy to get past the first couple pages of results...

I don't know if this has been mentioned but I've undergone yet another evolution in the cooking of my bacon. I call it my bacon because even though I will cook some for both me and my wife, I'll usually end up stealing hers. Anyways, back to the evolution...

First, I believed that the only way you could cook bacon properly was in a pan, cast iron of course, and preferably with a nice heavy bacon press, cooking in its own fat. Crispy? Yes. Delicious? Check. Unhealthy? It's cooked in its own fat, come on.

Next, I flirted briefly with the microwave. Those of you who subscribe to this method are only fooling yourselves that the finished product comes even within a mile of the aforementioned fried-in-its-own-fat method. Though seemingly healthier, the microwave method (even with a turntable microwave) was never able to replicate the consistent crispiness achieved with more "archaic" methods.

I then decided a compromise was in order: I would cook the bacon in its own fat, but not nearly as much so as was required before. How? With a flat counter-top griddle with grooves along the sides to channel the majority of the fat away from its surface. No, this was no George Foreman grill. This was a flat griddle that could accomodate french toast, pancakes, or eggs (over-easy of course) on one side while cooking the bacon on the other. There was only one problem with this method: the bacon took agonizingly longer to cook than most other foods did on the other side of the griddle. There were two solutions: 1) stagger the cooking to start the bacon first and the other food items later, or 2) take the next step in bacon cooking evolution. I tried the first, but found it too time-consuming and user-unfriendly having to monitor 8 things at once... I have ultimately taken the later step which I will describe below.

The next step of my bacon cooking evolution turned to an appliance that I had previously used to keep my bacon warm, while other items were cooking... the oven. Admittedly, part of this evolution in bacon cooking was inspired by Alton Brown (who cooks his bacon in the oven on thick slices of bread). While the bacon turns out beautifully through his method, your left with multiple slices of bread that usually go to waste. That's when one day, I saw it. My wife had just finished cooking a batch of chocolate chip cookies and had set them on a raised wire mesh grill to cool. That's when it hit me... cook the bacon on the wire mesh grill!

The next day, with my wife's mesh wire grill in my possession, I set my oven to 350 degrees, placed the mesh grill on a baking sheet (with sides, you don't want the fat to run off right?) and carefully laid my precious bacon down to cook. Approximately 10 minutes later, I tentatively opened the oven door and beheld one of the most beautiful sights seen by those of us in the Bacon thread: perfect bacon. Crisp, evenly cooked, deliciously browned, and free of fat (well most of it, there's always some that lingers on the top). Clean up was a breeze, a gentle scrubbing with a soapy sponge and the baking sheet was good to go. Additionally, minute adjustments over cooking time allows unprecedented control over the finished product with minimal supervision.

Is it possible that other methods might eventually rise to the occasion and even transcend this modified oven method? Sure. But if you've never tried cooking bacon in the oven, I recommend that you try it just once. With or without the mesh grill, the consistency of heat distribution and the control gained over the level of crispiness is hard to beat.

As Homer once said, "Mmmmmm, bacon."

In the time it took me to read your post, I could of fried up 4 pounds of bacon, ate it, died of a heart attach, be pronounced dead, and gone to bacon heaven. In the bacon thread, we keep it short, and tasty. Just like our bacon.

However if you ever want to invite me over for some of that "Fried in its own fat" Bacon, ill be there in a slightly irregular heart beat.

Strips of fat?

I don't get this. is American bacon different to normal UK/Danish/Spanish/everywhere else bacon? Yours seems to be actual strips with no width variation, ours tends to look like some kind of giant ear. Usually not fatty at all. Even if there is fat it's easily removable, scissors usually do the trick.

Hell I have bacon near enough morning noon and night, and supper! Yet I'm just 10 stone. hm. While on vacation, I was surprised to find that they have a whole building full of bacon on Michigan Avenue in downtown Chicago!

I don't include bacon in my regular meals, because it's never on the list of foods that doctors recommend, but when I'm on vacation, the rules are relaxed, and I let myself indulge. But a whole buildingful? That's too much of a good thing. Still, I hope they don't change the name (http://us.cision.com/) on that building.

You would actually probably lose weight. How much bacon can one consume? If all you had to eat was bacon, you would probably get sick of it quickly and not eat nearly as much, only eating when you were really hungry. I can't imagine eating 2000 calories of bacon evey day. (that would be at least three slices. :D ) I agree, though, your life expectancy would be rather short.

I just had the Baconator™ (http://www.wendys.com/food/Product.jsp?family=1&product=4) at Wendy's the other day.

A half pound of bacony goodness.

So they took the Big Bacon Classic, and switched the lettuce and tomato for another patty and more bacon.
When I saw this I *KNEW* I had to post about it here.

I am on their list and will buy some as soon as it becomes available.

*drool* HEAVEN!

Great, this thread had to come back. I'm really craving some bacon right now. Thanks.

I like my bacon cooked to a crisp with most of the fat melted off. If there's fat on a strip, I'm known to pick as much off as I can.

Bacon is one the most versatile foods on the planet...It can be added to virtually any type of meal...chicken, turkey, burgers, hot dogs, eggs, steak, mac n' cheese, pizza, shrimp, scallops, fish, rice dishes, pasta....even healthy foods, like a salad or steamed vegetables.

Incredibly tasty but truly a heart attack meal: Take a hot dog, wrap it in bacon and then deep fry it. Place it in a bun and smother it with chili, cheese and fried onions. My mouth is watering right now.

Has anyone here ever tried Jones Bacon Soda? It was an interesting flavored beverage. ...But, yeah, I think I'll stick with the real thing.

I bring you Chicken-Fried Bacon (http://www.thestranger.com/seattle/Content?oid=504141)

Chicken-Fried Bacon

Twilight Exit
2051 E Madison St, 324-7462
Seattle

The recipe is simple—strips of bacon are coated with breading, then deep-fried until nicely golden—but the results are thrilling. When they emerge from the fryer's depths, the Twilight Exit's chicken-fried bacon strips (five for $5) are swollen and bubbly and generally not very pretty. This charmingly deformed treat is served alongside a bowl of dipping gravy on a plain white plate, inviting those overcome by food lust to generously soak each bite, while the more inhibited may skim their bacon over the pooled gravy, dotting each piece with delicate, creamy pearls. Unlike deep-fried onion rings, the bacon fuses perfectly to its shell, rendering each bite crisp and fulfilling. Deep-fried bacon is fantasy fare: As with all seedy pleasures, it should be devoured without guilt. MARTI JONJAK

Bacon is cured and smoked pork. In the U.S. pork bellies are used, Canadian bacon is made from the rib eye of boneless pork loin, and most European countries use the ham (thigh) or shoulder to make bacon.

More than 2 billion pounds of bacon is produced in the U.S. each year.

Regular sliced bacon is .062 inches thick (1/16 inch) 16 - 20 slices per pound. Thin sliced bacon is .031 inches thick (1/32 inch) 28 - 32 slices per pound, and thick sliced bacon is .111 inches thick (1/8 inch) 10 - 14 slices per pound.

The BLT, (Bacon, Lettuce and Tomato sandwich) became popular when fresh lettuce and tomatoes became available year round with the rapid expansion of supermarkets after World War II.

I do love bacon, I'm not a big pork fan (I would die if I didn't eat beef), but I could go for a nice few slices of bacon! Whenever I'm at a restaurant and they ask if I want bacon with it, I always say yes, I eat the bacon on its own then the burger, mmm!

My town is home to one of the nation's largest pork slaughtering facilities, so alot of the bacon I eat (and I dont eat much) comes from a few km away, pretty weird.

A friend told me how to make excellent bacon and garlic chicken wraps:

Use the cheapest bacon you can get, the fat will be absorbed into the chicken so supermarket brand "cheap" streaky bacon is perfectly fine.

1) mix garlic, mixed herbs and philadelphia (or garlic philadelphia) with a large finely chopped onion.

2) lay 2 or 3 slices of bacon on a chopping board next to each other.

3) place a chicken breast on the slices of bacon and slice halfway into it to make it into a pocket.

4) fill with some of the onion and philadelphia mixture

5) wrap the bacon around the chicken breast to seal it and hold it all together with cocktail sticks.

6) put it in the oven for about an hour on high/medium

7) remove the cocktail sticks then eat it with salad or mixed vegetables. it's very filling!

YUMMY!
