I would like some advice about setting up 2 x 1TB HDD in a RAID 1 array.
My usage is for iTunes + iPhoto libraries and have a backup of my personal documents. I already have a 750 GB MiniStack v3 that I will use for Time Machine.
I'm undecided over buying 2 of these and setting them up via Disk Utility:

What are your suggestions?

Hmm... It looks like it comes down to aesthetics - the three ministacks (with the one you're using for TM) would start looking like a server room, where the single enclosure would look more elegant. Would the stack have a heat build-up problem?

So far the one I have is under my Airport Extreme, both are hot, but no problems so far.

If your looking for great data protection and a very easy setup consider the Drobo http://www.drobo.com/.
I currently use the first gen USB 2.0 one and have 1.5 TB of storage and love how easy it was to setup and maintain.

RAID would be overkill for what you want to use if for. What possibly could be so disk intensive that you would need to set up the RAID? If it's for redundancy, you'd be better off using single disks and backing up on a regular basis.

Completely agree on that. Also likely will be cheaper.
I'm using 2x 1TB Samsung Spinpoints housing one in a Macally G-350SU and one in a Rosewill RX81 for movies. Total cost for all that was $280.
