The first thing you'll want to do is find some good icons
The Iconfactory (http://www.iconfactory.com)
and
Xicons (http://www.xicons.com)
are good sites for OS X compatible icons.

Once you download the icons (get them as folders for now) find one that you like. Select it by clicking on it once. Then either press command-I or go to File->Get Info. Click on the icons picture in the top (it should highlight slightly with blue). Either use command-c or Edit->Copy to copy the icon. Now select with one click the folder you want to change the icon of, get info again, and this time after you highlight the icon paste the icon with command-v or Edit->Paste.

Thats it.

What Krizoitz described has been similar in Mac OS 7-9.2.2

to change icons systemwide you need an app like CandyBar though.
