So I'm shopping for some new headphones, both in ear (with mic) and over the ear.
any suggestions?

I suggest the V-Moda earbuds for the iPhone. They are $81 on amazon but you can get it much cheaper on eBay , for about $40

I have heard many bad things about the v-moda vibe duo headphones. I have heard that they only last for 6 months at most, v-moda does make a great pair of headphones called the vibe II. I have the vibe II and love them. (I didn't know elves could make headphones,:D but thanks Santa!;)) they have a great sound. I was looking at the vide duos and the guys at the apple store said that they were bad and the vibe IIs were great. These are about $20 more but last. This was a month before the Apple in ear headphones acctually shipped. I has also heard good things about these apple headphones. If you decide to buy these, please post about them here.

I have the SkullCandy FMJ, V-moda vibe duo, New Apple in ear headphones and Etymotics ER6i.
I would like to say it really depends on what type of sound you prefer. Putting all these headphones to the test they all produce different sound.
The FMJ, very bass heavy, the ost bass of all the headphones. Good built quality and only complaint is that it feels like the bass is the centerpiece of all the sound, also the mic is on the other side compared to the others. Good design with the 11mm drivers and metal materials.
Vibe duo, yes they do not last very long, although their distinctive warm bassy sounds are good. Although their design and materials are good as well.
The apple in ear headphones are very hard to review, this is because compared to the previous two, plastic feels very cheap. Their sound is very distinctive. Less bass but it is more suited to acoustic music as it reproduces those sounds very well.
Etymotics are the most clinical of sounds, very crisp and clear. More for critical listening.

I just bought Zagg Z.Buds. Got it for ~$52 shipped with the 30% coupon. I've seen good reviews so far. Can't wait to get them.

That's what I use with my first gen iphone. I'm no audiophile, but I hear things I'd never heard before. Everything sounds very clear and the bass is great. As for them dying quickly, I've heard that, but have yet to have any problems with mine (6 months in).

how much you want to spend? cause if quality for a cheap price is what you want i would recommend shure's E3C's and just get the mic adapter for them....:D that's what i have and love it...

I use the company Ultimate Ears for professional in-ear systems for myself and the bands I work for. For work I use the UE 7 Pro's but for everyday iPhone and music use I use the Super Fi 4 VI's - http://www.ultimateears.com/_ultimateears/products/superfi/superfi4vi_description.php
They are about 150 US but worth the money. Great sound and inline controls that work with the iPhone.
There are better models as you can see from the web page, but as a professional sound tech who deals with this everyday, I can honestly say your not going to get better for the money.

You should just try out the new Apple In-Ear buds. Sounds like what you're after and at a more decent price than some of the others. :)
