I don't know if this would be considered true RAID, but if i get a 500GB Time Capsule and plug in a 500GB USB Hard Drive, could i set it up like a RAID 1 array so I do have the extra security?

you could just get a airport extreme and an external drive that does hardware raid. I don't think the time capsule has the capability to mirror its internal drive.

No it can't. The only thing that a USB HDD attached to the Time Capsule can do, aside from being a wirelessly shared volume, is either back up the internal HDD of the TC or be used as a separate volume for Time Machine (in which case, the backup is built from scratch again).

Do as milk242 suggested if you want a RAID1 config with AirDisk/Time Machine. Although it's not officially supported by Apple to use Time Machine via AirDisk using an AEBS, it will still work and will yield the same results as a Time Capsule.

OK, thanks. If it will backup the TC, that is fine. Can you set it to backup on its own like once a week or something like that?

Unfortunately no, you have to do this manually. You can archive the TC's HDD by going into AirPort Utility > Manual Setup > Disks. Then make sure Time Capsule Disk is selected (default) and click Archive.
