Does anyone know a program that will let me rip just the audio off of either a DVD or an mpeg-4? I'd like to play with the audio and discard the video.
Thanks!

WireTap from Ambrosia Software allows you to capture the audio from any application. Unfortunately you have to play the DVD/mpeg4 to allow this to work. You can get it at http://www.ambrosiasw.com/utilities/freebies/.
Also OSex might be able to rip the audio off a DVD (I haven't tried it, but it looks like it has the ability to do so). You can get it at http://www.macupdate.com/info.php/id/9830.
As an added bonus, both of these applications are freeware.

Great! Thanks for the help.
For this particular project, I used HandBrake to convert the DVD to mp4 and then AudioExtract to rip off the audio. It took forever to do that though, so these solutions are going to be work a lot better. I'm taking all of my concert DVDs and putting them into iTunes--something I would never have considered back in my windows days!
