Why is it taking so long ? Do they care about jailbraking a phoneless iPhone ?

theyve jailbroken it, it's just a tethered jailbreak right now

No cuz I'm not a computer gadget hacker nerd guy . But if they have the 3g and everything elese jailbroken then why is it taking so long for a simple iPod touch 2g?

If you have been paying attention to the topics here, you would know that the 2G iPod Touch has a different processor than the 1G iPod Touch and both the iPhones. This made it a bit more difficult for the Dev Team to build a JB for this iPod Touch.

Off-Topic: Now I think I need to get one... Faster processor and emulators FTW...

Then I guess you'd have no idea the amount of work that people must do in order to successfully break the software on their own, unpaid time.
