Even when I turn my computer off and plugged into the power supply, the battery never seems to go above 97-99%. I only got it a week ago, what gives?
I even calibrated the battery as suggested on apple's website...

try calibrating the battery again...
this happened to me a couple of weeks ago and is perfectly usual, re-calibrating sorted it out a treat. maybe it just needed a couple of calibrations?

It's kinda normal. These batteries are kind of funky. My battery always does that, but after letting it cycle through several times... it's back to normal.

Tag on question. If i wanted to run on Power only and remove the battery is it best to store the battery full or empty?

From what I've heard this isn't the greatest idea... Someone correct me if I'm wrong here.

It's perfectly normal for the battery health and maximum charge to fluctuate up and down over time. You only need to be concerned if there's a significant drop, like below 80%. Calibrate at least once a month, as Apple recommends and you should be fine.

Not recommended to run without the battery. Your processor will get throttled down.

The battery also dies quicker left outside the computer than inside.
The only way to properly preserve it is to keep it on 40% charge inside the fridge, im not actually joking either check the Apple support site.

Battery doesn't charge above 92% or so, let it cycle through and then re-charge and it should see 100%
