I want to have nothing on my desktop except my HD image. Is there a way that I can organize downloads to go to a specific folder on my dock?

If you are running Leopard, all Safari downloads should go to the Downloads folder, but there is an option in the browser preferences. Look there.

Finder > Preferences > uncheck all boxes except hard disks (your HD image) under "Show these items on the Desktop:" This will help keep your desktop clean.
If you're running Leopard, all downloads should go to the DL folder in dock.

Is there any way to sort downloads in Downloads folder? I tried demo software (don't remember the name) some time ago on Tiger (they didn't had downloads folder then), but I had mixed feelings.

Open the folder and set the Keep Arranged By ...
