I believe IBM ViaVoice will do just exactly what your asking for and much more! Look on the places that resell Macs and you'll probably find it.

Dragon NaturallySpeaking (http://www.scansoft.com/naturallyspeaking/) works better than IBM ViaVoice due to better AI and trainer.

Note: No matter the program, you'll have to train it for hours before it recognizes your voice and accent efficiently. So don't expect to have 100% voice recognition right out of the box.
