I am new to Mac. (I bought mine on Wednesday) and I have a quick question about the e-mail program. Is there a way to set it up so that it only spell checks the portion of the e-mail I wrote rather than the entire thing?

No, but if you use spell check as you type (enabled by default), Mail will only check your input.
