Yes it's possible, yes it's very easy. Found out on accident, probably was in the manual but it's never talked about.

Just hold the sleep button (top button) and then click the HOME button once, the screen will flash taking a screenshot.

So yes, I might be posting rather basic info but I've had my iPod touch for over a year and I just found this out on accident...

Please search, it's been posted many, many times. It was added in the 2.0 software.
