I am only interested in running pandora/lastfm apps in the background, and jailbreaking seems to be the only way to do it..someone mentioned "it's still tethered" but I don't know what it meant.. thanks

"Tethered" means that it has to be connected to the computer for the iPod to do anything. For example, any time you want to use the iPod you will have to hook it up to your computer in order to even turn it on.
At the moment jailbreaking the 2G touch doesn't seem worth it.
