The new hardware will ship with a special build of 10.5.6 that'll have the drivers.

I believe if you recheck the source for that, that actually only refers to ATI 4870 on the Mac Pro.

Why can't it apply to the iMacs too then?

Apple Sale people claim its due to the high-demand of the ATI option .... don't believe that in the slightest since it was a 4 -6 weeks wait the moment it popped up on the store.

One week has passed, but it's still 4-6 week... why not 3-5? :P

I got the same story when I ordered the first day within 2 hours of the announcement. I called immediately when I say the shipping / delivery date and was told there was such a great demand that they needed to restock. I then asked if I changed back to the standard card could I get it faster. She said she did not think so. In any event, I have not heard that one person has received the iMac with the ATI Card. So I do not believe it is a supply problem as ATI could not be so far behind production in this economy.
Reeeeeally dumb question that I'm sure googling could answer... BUT, can you replace vid cards in the iMacs? I'm in need of an iMac NOW and am wondering if I could upgrade to the ATI in a year or so.
Sorry, I'm coming from Mac Pro land.

Not really as iMacs are essentialy laptops parts in a desktop shell. Ram can be added and f you are good you can update then HDD but that's about it. That's why this video card discussion is so critical to some people, me included.
