You don't have a choice. Apple no longer sells 32-Bit machines, everything they sell now is 64-Bit compatible. OS X Leopard will run in what's called "64-Bit mode" on those machines.
When it comes to running Windows Vista or Linux on Apple hardware, you should choose the 64-Bit versions (provided that you either have or are able to install a 64-Bit version of Apple's BootCamp in Windows). The 64-Bit version of Windows Vista runs much better than its 32-Bit sibling, so use it if you can get it.
The 64-Bit flavors of Linux also perform superbly on Macs. Ubuntu 8.10 flies on my Mac Pro and everything, including my 3G/UMTS card, is supported out of the box.
In case you still want to use Windows XP on your Mac, your only option will be the 32-Bit version of it. Apple does not provide drivers for 64-Bit Windows XP.
