My mother want to sell audio-books on iTunes.

Her plan is read popular stories (like Little Red Riding Hood) & similar.

What is necesary to do? Is complex, lawyer-infested or is relative easy?

She plans on reading copyrighted material? Forget about it. The fees involved wouldn't make sense unless she's doing this professionally, which includes professional recording as well. Better for your mother to contact one of the many publishers of children's audio books with a demo tape.

Common historys and folklore are under copyrigth? I don't talk about 20th century books and history...

Depends who wrote the history and story. As an example the story "Little Red Riding Hood" may not be copyrighted, however my telling of the story is. The general history of a country or people is not copyrighted, however if I take the time to write it down in my own words, then this is copyrighted.

It depends if the original story is copyrighted still. For a history, you would be required to site your sources. For a myth or folktale it shouldn't matter, however I am not a lawyer so I can't say for certain.

There are tons of books in the public domain. Famous books.
They can be copied, read, sold or whatever with no royalties due anyone but
the new content creator.

Look at the e reader app to get an idea of how many PD books there are.
