Can you update to 3.0 then restore back to 2.2.1?

It's possible, but the baseband gets updated, so... It might not be worth it.

Also you need to pay $100 to get into the dev program to get the 3.0 software.

It was fairly easy to downgrade. I do not recommend running the beta firmware regardless though, it is meant for developers, not the general public.
