What version of Adobe Camera Raw (ACR) are you using? It looks like you need to be on 4.6 for 50D support: http://kb.adobe.com/selfservice/viewContent.do?externalId=kb402444&sliceId=2. The latest version of ACR is 5.3, but that only works with CS4.

edit: Here's a link to the OS X download for 4.6: http://www.adobe.com/support/downloads/detail.jsp?ftpID=4039

You don't open the disk image file with Photoshop, you open it with finder and copy the plug-in file it contains to your Library/Application Support/Adobe/Plug-Ins/CS3/File Formats folder as instructed in the linked document.

Just follow instructions, should only take a few minutes ;)

Updating Photoshop CS3 ACR Plugin (http://www.adobe.com/support/downloads/detail.jsp?ftpID=4039)

open finder > mac HD > Apps > PS CS3 folder, open it and there is a plugin folder within :)

Have you tried converting the CR2 files to DNG? Something like Canon DPP works fine for that.
