Now that Apple has switched to Intel chips, what things are still holding Apple users back from buying any old PC graphics card and popping it into their Mac Pro?

The drivers for those graphic cards aren't always available for OS X

Is that really it? I thought of that but that seems like one meager sticking point for Nvidia and AMD/ATI.

It is one of the ways Apple does quality control, by only having drivers for certain cards they can limit problems associated with hardware incompatibilities. They can in essence upgrade OS X knowing exactly what hardware it is being run on. If you want to use a card that OS X doesn't support, you have to get the drivers by some other means.

Three words: EFI.
Once MS gets its head out of its ass and dumps BIOS there will be more options.
