I see the new panther version has a feature on expose where you can toggle open windows and show the desk top and such with a quick key. But is there a way in jaguar to close all the windows to view the desk top without manually shrinking all the windows?

I wouldn't know, but the easiest way would be to put your desktop folder into your dock.

you can minimize multiple windows of the same application by holding the OPTION key and you click the minimize button. but that's not as useful to me as just clicking the finder icon in the dock, as i don't keep anything on my desktop, it's all very organized inside my hard drives instead.

You can option-click on the finder icon in the dock. This is supposed to hide everything but the application you clicked. It doesn't work too well if you are running classic apps or some carbon apps either.

As suggested, just drag your desktop folder in the dock. It will open a window with all your stuff on the desktop when clicked
