I'm not really sure if it would work or not, seeing as how you'd have to get the iPod firmware on the new hard drive, but iPoding.com may have your answer.

i've read (in japanese) of someone successfully swapping HDs between 2g 20gb and 1g 5gb, so if you can obtain the correct sized HD, i think it can be done.

it looked complicated and i am not sure how much those HDs run, but it might be a fun project, if you can accept the risk...
