I checked Help for how to change the default browser (cause they were all about that functionality in Jaguar since Microsoft wasn't...) - anyways, Help just had instructions for making Safari the default.
In Jag, there was an Internet pref panel, mine has been replaced by a .Mac pref panel.
Oh and I hate the new Mail as well, I can't force it to check for mail anymore, that sucks.

Open Safari; go to Safari menu>preferences.

Perhaps the "Get Mail" button is what you're looking for.

Also, the Internet System Preferences file from Jag will add it back to Panther. PM me if you need it. Apple made a huge mistake removing that option from Panther.
As for Mail.app, besides the Get Mail button there is also a Get New Mail menu item under the Mailbox menu. Also, right-click or control-click on the Mail.app in the Dock will give you a conextual menu to do the same.
