The memory seems to take a huge jump in price when you go over the 512 + 256 built in. Is there a huge difference with more than the 768 to 1gb? I do a lot of photoshop work but am currently working on a 550mhz with 512mbs. I plan on purchasing a 12" powerbook and am trying to decide how much ram to buy. Thanks.

Ditto what Stuuke said--just be sure you have at least 512. Under that and any Mac's going to be sluggish. Obviously, the more RAM you can add, the better, especially if you're using something like photoshop.

The simple answer is "Buy as much as you can afford"
Just how much can you afford? I dunno, ask your wallet :p

Why would apple go with a built in slot with 256 over a replaceable one. It would be a lot cheaper to get two 512's than one 1gb
