How long does it take to know if you have a few years in C++ and C? I tried to search this in the Wiki but there is little about OpenGL ES in it (unless I missed something)

Hi

ES is a subset of OpenGL so I would recommend you get yourself a copy of the red book and read it in conjunction with the ES reference. You'll soon get an understanding of what's in ES and what's not... but basically no immediate mode and no shaders. However I would recommend learning the basics of OpenGL first on your Mac using GLUT. There are loads of tutorial/demo sites on the web for OpenGL and GLut. Once you've got an understanding of OpenGL, the ES reference is all you need really.
