How to open a file in a particular app? (gimp)

Having had gimp for a few days, I'd like to use it for my default viewing and editing app.

When I click an icon in my image folders, Preview opens it. How can I change this so that gimp opens the pictures instead? Or perhaps have the option of choosing between several apps like Windows allows?

Right click on the file >> "Open with.." >> Choose the application if it's in there or click on "Other" and tick "always open with" after selecting the right application
 
If you want Gimp to open all files of a particular type- jpg for example- you'll have to press the "Change all" button in the Get Info screen.
