I'm confused. Do you want to learn iPhone programming, or artificial intelligence (AI) programming, or did you mean to say UI (user interface) programming?

I know objective c and iPhone programming I just am unsure how to go about making computers to play against as in AI.

There are volumes of books devoted to the subject. I suggest looking for and buying them as a single post in this thread can't and won't be able to tell you what it is you want to know, AI is a VAST subject

AI is a vast subject, but the reality is that whatever you are doing probably won't require anything that really qualifies as AI. Depending on what your game is, you can probably just come up with some simple rules that make your enemies behave properly. That is what you should be shooting for at first anyway, since it sounds like you are pretty new to all of this.
