Ive found bunch of programs that can do this, but they dont work with the OS 3.0. Any program that works with 3.0

Did you try? A lot of software works across revisions even if the creators don't know it does.

Forgive me, but can't you just go into iTunes and do File>Transfer Purchases from ______ 's iPod.

It will probably take some time before those programs will work with 3.0. You might trying to contact one of the developers and ask if you could help with beta testing.

The latest version of Phoneview works with 3.0, I used it earlier with my iPod Touch.
