question about turning off edge/3g on 3.0 JB

i just did a JB on a 3G for a friend. I was going to use bosspref to turn off EDGE/3G but i saw others had mention changing the APN to disable the data.

my friend just wants to use wifi only so in the past for the 2G, i would just turn off EDGE and that did the trick but i'm not so sure with the 3G.

does turning off EDGE/3G with BossPref completely stop all data (except for WiFi)?

what if i disable EDGE but leave 3G on instead?

is changing the APN reversible in the future?
