Force Quitting programs on iPhone 3.0

I did a search for this but couldn't find an answer. Can some please instruct me on how to force quit programs? I don't mean closing them, but instead actually "quitting" them like I used to in by holding the home button for a few seconds.

Hold the sleep button till it says slide to turn off, release sleep button. Then hold home for 7 seconds.
