Simply, I want to take old Family Videos on VHS and put them on my eMac for processing and burning to DVDs. What's my best choice for doing this?

You'd need a digital/analog converter. These can cost about $300, but you might be able to get around it. If you have a DV Camcorder, you can use that as the converter. Hook it to your eMac and to a VCR and you're set.
Let me know how things go,

DV Camcorder?
Lol.
I have a Sony Camcorder, 8mm, that has an 8x zoom.
Would this work?

I'm not looking for a camera, I'm looking for a piece of hardware that will convert VHS to a digital format.

There is nothing on that page worth buying.

Look under the "Digital Video Converters" column.

$300? Jeez, maybe I should just give up before I start.
Too bad I can't find someone I can just borrow one from, cause after I convert these few videos I won't need it anymore.

This is the absolute best analogue/digital video converter for consumers.

A little more money than some others, but worth every penny if your time is valuable and you don't enjoy the frustration of things not working like they should.
Here is an earlier thread on the same topic

Good luck :)

Hey, you really shouldn't have a hard time selling it on Ebay or Amazon when you're done with it.
