I understand that I have to get the UDID. I am a registered developer. When I read the instructions it tells me I need to email apple. What is the email address? Is that something I will receive with my Dev kit?

What instructions are you reading that tell you to email Apple? For instructions on how to locate a UDID, go to the Program Portal, Devices section, How To tab, and open up "Locating a Unique Device ID". You can either use Xcode or iTunes to find what you're looking for.
