thegaragedoor.com has just posted a tutorial which shows how to take a loop and change it to just about any scale. It comes with a scales catalogue written in GarageBand that includes some wonderfully exotic scales, like Gypsy, Hungarian Minor, Balinese, etc.
The examples on the site show some of the stunning tone colours that can be achieved this way.

There are more than 350 7-step scales in the chromatic scale, a major scale defined by a major 3rd (4 semitones) and a major 7th (11 semitones)...
Who tells you which one is the right one but yourself?
Check out the work of Joseph M. Schillinger about this topic, the work of M.C.Escher, Douglas R Hofstadter, or you might find a fractale screensaver inspirational...

Shamefully, the best theory book I have ever read, for any insttrument, is by a german author, Werner Pöhlert, called Grundlagenharmonik, if you are serious, this is a must and all you will ever need to read...
