Title says it all. I want to use a video camera to do some webcasting via USB (also using Firewire, but have a need for a USB camera as well). So what USB cameras will a MBP work with?

OS X 10.4.3 onwards will work with any UVC-class USB cameras.
The simplest way to determine whether any given camera is UVC-class is to look for a "Certified for Windows Vista" logo on the box - if it's there, it will work with the Mac without needing any drivers, irrespective of whether or not there's a Mac logo on the box as well.

Here is a camera that I just bought and works great on Mac / PC / Linux just out of the box no drivers necessary and the price is right!
It is a webcam AND a microphone, the quality is OK, not bad but not great but for how cheap it is, it's amazing!
