I've just set up Gmail on my iPod Touch under the native Mail app. When 1st configuring i checked "other" rather than "Gmail" to set up IMAP.

Everything works great and syncs instantly with my Gmail on a browser desktop....except for the deleting/trash.

When I click the trash icon for any email under the Mail app on my iTouch the email in question ends up in "All Mail" on my Touch and also at "Trash."

When I go to Gmail.com on my Macbook and the message I thought I was trying to delete shows up under "All Mail" on Gmail.com and not under Trash.

What's going on here?

What i'm simply trying accomplish: I want to be able to delete an email while on MAIL on my iPod Touch and have it be deleted since i'll never need it again on Gmail.com and also the iPod touch. If I want an email deleted there is no reason for it to reside next to "All (my other) Mail" whether that's on my iTouch or Gmail.com

I use the native Mail application with Gmail all day, every day and have never had a problem. I use a PC instead of a Mac but it shouldn't make a difference. Have you tried deleting/removing your Gmail account from the Touch, resetting your device and then setting up your account again?
