Its tuesday (even though new music is updated on mondays over here) and there has still been no update, it 12pm now.

When IS the time they update, anybody know.

Not sure - though it seems like new music gets put on all the time. Officially Tuesday is the new music day here in the UK, just as it is in the US.
If you subsribe to the emails, Apple will email you to tell you whats new this week.
