Hi.
I got my iPhone in my mailbox today, but I have to wait another 2 weeks before I get the sim-card thats working on it
So how do I remove the sim-lock that restricts me from using anything else than the one that I bought?
This means I cannot access the menues to find out which firmware I'm running.
And I've managed to upgrade it to 3.1 now by setting it in DFU.
Any help here?

If you have updated via iTunes using a legitimate unhacked firmware, then there is no unlock for you, with no guarantee there ever will be
If you've applied a pwned firmware, just download Ultrasn0w. Follow one of the guides here or on iClarified

Ouch.
So there's no way I can downgrade it?

A 2G or 3G can be downgraded.
A 3GS can be downloaded if you uploaded the necessary files to Saurik's server.
If you don't have a 2G or a 3G or uploaded those files, then no.
Also, downgrading the fimrware doesn't downgrade the baseband, which is the component that Ultrasn0w modifes to allow for any SIM/carrier

You cannot downgrade the baseband. For now, you are stuck.
I know this is of no help now, but always necessary to research before ever updating your phone if jailbreaking and unlock is of interest to you.
