Changing Mailbox Behaviors when using Google's Activesync

When I set my phone up with gmail initially, I had the option to map locations on the phone to folders on the server, i.e. I mapped the deleted box on the iphone to the all mail folder on the gmail servers so that mail would be archived instead of deleted. When I set up gmail using the activesync settings via exchange, the advanced tab is no longer there to set this up. Is there a way to do this with the exchange settings?
