When in an area with multiple wireless networks how do I select one and keep it at the wireless connection and not let it select another?
 
You can try this: click the airport icon in the toolbar -> click "open Network Preferences." From there, do two things: Uncheck the box that says "Ask to join new networks" and then click on Advanced. From the list of "Preferred Networks" drag the networks into the order you prefer and/or remove airport networks you don't want.

Hopefully this will work!
 
Putting them in the order you want to use them will work 99% of the time. Only occasionally does it mess up, and that's usually some fault of the router being offline etc.
