If it's a 3G, just use iTunes to restore to official Apple 3.0 firmware, then re-JB using Redsn0w.

If it's a 3GS and you don't have your SHSH files in Cydia, then forget it. Apple quit signing the 3.0 and 3.0.1 IPSW files for the 3GS.
