Windows 7 and OS X boot problems

I just installed Windows 7 on a separate drive in my Mac Pro with all the other sleds removed. Once Windows was set up and installed/updated, I shut down the system and reinserted the other sleds. Here what is located on each:

Bay 1: OS X
Bay 2: Windows
Bay 3: Shared FAT32
Bay 4: Movies 2TB

The way I want it set up, I just want Windows to have access to the shared drive in bay 3. So I go into Computer Management and remove the drive letters for the OS X and Movies drives.

Now I can't boot into OS X!!! What does removing the drive letters do to the partition tables?!?!?!

All of my data is still on the drives cause I can reassign a drive letter under Windows and it will list everything. diskutil list and fdisk both list the partition type as EE. If I try and change the type back to AF (HFS+) I still cannot access the OS X drive by holding down option on boot up.

How do I fix this?

Sounds like a job for gparted. I know this isn't the first time I've heard of this, but I can't find the previous mention. There is some other way to get Windows not to assign a letter to those drives that does not affect your ability to boot from it in OS X.

Note: You didn't way which version of Windows. It may make a difference.

I did the same on my duaghter's older MacPro and it worked fine. We just made sure the OS X drive was in the same bay it was removed from, though I don't understand how that matters since you can boot OS X from external disks without a problem. Does option work if you put the OS X disk in an external housing?
