I installed the new Acrobat reader 6 for some time ago, but I canīt seem to get rid of the old one which is default in Panther. How do I do this? Just remove the old version manually?

Or is there something like uinstalling programs in OSX as in XP?

If all you want is for Mac OS X to use Adobe Reader 6 as the default, and remove the old version, all you need to do is delete the old application file (and its folder, if it has one), then Get Info for a PDF, navigate to Open With, choose Other (if Adobe Reader 6 isn't in the list of applications) and navigate to Adobe Reader 6. If Mac OS X won't let you select Adobe Reader 6, change the type from "Recommended Applications" to "All Applications" - it will now let you choose the application you wish to use. Click OK, then (back in the Get Info window) click Apply to All and confirm that you want to do this. Now all PDFs will open in Adobe Reader 6, and it won't try to use the older version (or Preview).
